It’s the Fourth of July and, like many other Americans, CJME The Green Zone’s Belton Johnson and his family are celebrating the only way that makes sense — with food.
According to Belton, his Independence Day menu consists of all the best southern comfort food.
“The grill is going, the ribs are about to go on, my peach cobbler is over here — I just have to finish mixing up the filling,” said Belton, as he mixed his baked beans and stirred his homemade barbecue sauce.
This year, Belton’s mom, Glenda, is up from his hometown of Coffeeville, Mississippi to celebrate the Fourth of July, and with her comes her famous corn salad.
“That’s my favourite part — when you eat,” laughed Glenda. “But then, of course, you enjoy seeing your family and people you haven’t seen in a long time.”
While the food tastes the same here in Canada, the former Roughrider said all that’s missing is the full house.
“Back home, we’d probably have around 30 to 40 people — everybody would be there,” he said.
But whether in Mississippi or Saskatchewan — thanks to good food and family — there will be no shortage of celebration this Fourth of July in the Johnson household.
