One of the most tender, flavorful cuts of beef is the short rib. When they’re marinated and smoked they make the perfect entrée or appetizer
for you to impress your next dinner party or tailgate.
First trim fat from short rib remember we can keep the membrane in tact.
For the marinade – In a bowl, whisk together Sweet Chili Sauce, and you favorite rub seasoning , honey, olive oil and thyme
Place ribs in a resealable bag and pour in marinade mix. Coat ribs thoroughly to marinate and refrigerate overnight.
Next day, Get the smoker fired up to 250° and place ribs bone side down on grill grate. Allow to cook for 5 hours. Just before removing, glaze with BBQ Sauce.
Next, place on a serving plate, serve with mac & cheese, collard greens, and all the Southern fixins, guess what, it’s eatin time!!!

8 BEEF SHORT RIBS
1 TBSP EXTRA VIRGIN OLIVE OIL
2 TBSP HONEY
1/2 CUP BBQ SAUCE
1 TBSP OF YOUR FAVORITE RUB
2 CUPS SWEET CHILI SAUCE
1 TBSP THYME, DRIED
