“It’s annoying, and a little frustrating,” chuckled Mark Shmelinski, co-owner of The Everyday Kitchen.
“I understand that costs go up for everyone everywhere. But it’s hard for us when costs go up and services don’t change, or services don’t go up.”
The Everyday Kitchen serves doughnuts, coffee and other treats. It has two locations – one on Hamilton Street and one on East Buckingham Drive.
“As far as a major impact on our business, we’re not a massive power user but that’s probably close to an extra $400 (a year) — and that’s just for one location. That has to come from somewhere,” Shmelinski said.
He added that The Everyday Kitchen also owns another commercial building.
Shmelinski said he hasn’t done the math yet, but says the extra cost is likely to eat into profits.
“It’s the heating and cooling as well as (having) a lot of power-hungry equipment,” he said.
“We’ve got walk-in fridges, we’ve got ovens, we’ve got espresso machines and grinders and all of those pieces. So really, it affects every aspect of the business — whether it’s the production of the food, or serving customers and keeping the space comfortable.”
Shmelinski said The Everyday Kitchen constantly works hard to get the best prices from vendors on all of its goods.
He said that although the business occasionally gets faced with instances where it has to pass on costs to customers, Shmelinski said he doesn’t anticipate that this will be one of those times.
“We look at every way possible: more people, more sales, maybe a different sales channel or different ways to generate revenue is what we always look at first before we try to raise our prices,” Shmelinski said.
Like many in the food and bakery industry, January and February are usually among the slowest months for The Everyday Kitchen, with weather playing a huge factor as to whether or not people end up going out.
